Hearty Whole Wheat Quick Bread

I was completely out of breakfast food the other day and this recipe saved my morning. There are plenty of times where I just don’t feel like setting dough out the night before to make yeast bread. This bread is perfect if you need to whip something up fast.  Adapted from eatingwell.com


  • 2 cups whole wheat flour
  • 1/2 cup flax-meal
  • 2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 2 eggs
  • 1 1/2 cup water
  • 1/4 cup melted butter
  • 4 Tbsp coconut sugar


  1. Combine all dry ingredients.
  2. Mix water, eggs and melted butter and pour into dry ingredients. Mix well.
  3. Preheat oven to 350 degrees
  4. Pour batter into greased standard bread pan.
  5. Bake for 45-50 minutes or until internal temperature reaches 200 degrees.

Serve with peanut butter for a hearty breakfast-or top with butter and serve with your favorite soup!
