I was completely out of breakfast food the other day and this recipe saved my morning. There are plenty of times where I just don’t feel like setting dough out the night before to make yeast bread. This bread is perfect if you need to whip something up fast. Adapted from eatingwell.com
Ingredients:
- 2 cups whole wheat flour
- 1/2 cup flax-meal
- 2 tsp baking powder
- 1/2 tsp baking soda
- 1/4 tsp salt
- 2 eggs
- 1 1/2 cup water
- 1/4 cup melted butter
- 4 Tbsp coconut sugar
Directions:
- Combine all dry ingredients.
- Mix water, eggs and melted butter and pour into dry ingredients. Mix well.
- Preheat oven to 350 degrees
- Pour batter into greased standard bread pan.
- Bake for 45-50 minutes or until internal temperature reaches 200 degrees.
Serve with peanut butter for a hearty breakfast-or top with butter and serve with your favorite soup!
