
This banana bread is one of my favorite go to recipes. Its super easy to whip up and combined with a nut butter, makes a hearty breakfast. I make this anytime I have old bananas around. It is dairy free, gluten free, refined sugar free and freezes very well.

You can bake it in a loaf pan, into muffins or a 9×13 cake pan. It can easily be converted into a healthy banana birthday cake just by adding a yummy cream cheese or chocolate icing. This recipe was adapted from detoxinista.com.
Ingredients:

- 8 ripe bananas
- 1 1/2 cups coconut flour
- 10 eggs
- 1/3 honey, coconut sugar or maple syrup
- 2 tsp cinnamon
- 2 tsp baking soda
- 1/2 tsp sea salt
- 1 tbsp vanilla extract
Directions:
- Add all ingredients into blender
or food processor.
- Blend until smooth.
- Grease 9×13 cake pan with coconut oil or butter.
- Pour mix into pan.
- Bake at 350 degrees for 35-40 minutes or until golden and firm.
- Let cool and enjoy!
